Italian inner fusion

We at Luxury Lifestyle Awards feel lucky to be able to connect with the best and brightest owners, managers and employees in various areas of business. It’s the people we sincerely admire, respect and are happy to speak to. Just like Elvio Milleri, owner of the restaurant Era Ora, who will tell us about the uniqueness of their business, their victory in Luxury Lifestyle Awards and why their restaurant is decorated with moons and planets.

Elvio, thank you for doing this interview. Tell us a little about your company and its history.

Our uniqueness is that at the beginning of the 80s we introduced high-quality Italian gastronomy to Denmark with a great impact on the gastronomic evolution of the country, also thanks to our organic bakery IL FORNAIO, which brought high quality organic Italian bread and products into all Danish families. We have been recognized three times as the best restaurant in the whole Denmark, are endurance leaders with 23 Michelin stars, and we have been awarded as the best Italian restaurant in the world outside Italy in the first-ever guide about Italian restaurants abroad. We have created a new and vast generation of Italian restaurants opened by our chefs and sommeliers…. We have gathered a collection of 90,000 bottles of Italian wines from the past 50 years and have been promoting the highest quality Italian wine since 1983.

Your choice of name for a restaurant certainly draws attention. Does it mean anything special? How did it come about?

In Italian, “era ora” means “about time”. And this notion of time is crucial for us – Elvio Milleri and Edelvita Santos – the Italian/Brazilian couple who founded the restaurant in 1983 and has been drawing its sensorial profile ever since.

What differentiates your company from others on the market? What is so unique about it?

We are a restaurant that started its journey as home cooking 36 years ago, having the same people behind it and growing from home cooking to the Michelin star level.

We have the longest endurance of Michelin restaurants in Denmark.

We have been awarded as the best Italian restaurant in the world by Gambero Rosso in the first guide of Italian restaurants abroad ever published.

We are the first ones to have started wine pairing (creating dishes to the wines) in 1987.

We have a wine collection of 90.000 bottles, 1.600 labels, just for the restaurant.

We are the creators of ILFORNAIO, the leading organic Italian bakery that supplies all of Scandinavia

We heard that you are a proud recipient of a Michelin star for the 23rd time in a row. What is your secret to success? Is it somehow connected to the moons and planets in your design?

There is no secret. Business is all about dedication and passion. The restaurant is a lifestyle and needs daily attention, from the owners to the staff.

Speaking of prestigious international awards: this year you were proudly recognized by Luxury Lifestyle Awards in the category of Luxury Restaurant in Copenhagen, Denmark. Is this a new experience for your business? How do you feel about this victory?

To tell you the truth, we never thought it was possible. We know our competitors and what they do and what their concepts are. We were surprised and very happy when we received our award!

Elvio, your business has a well-established history dating back to 1983. Would you say you thrive on constant innovations and improvements or a respectable tradition?

We are using the vast variety of Italian gastronomic dishes with over thousands and thousands of recipes. Every day is a new challenge for our kitchen when it comes to innovation. We foster improvement in all of our areas, not only in the restaurant but also outside of the restaurant.
We have a lot of teambuilding, our staff has a very good relationship (kitchen and the servers). The owners are close and personal to them to ensure more motivation. It’s a family business that consists of Elvio & Edelvita with their youngest son (of two).
